Texas BBQ Mackerel with Wedges and Coleslaw

Texas BBQ Mackerel with Wedges and Coleslaw
  • Serves: 2
  • Preparation: Approx 15 minutes
  • Cooking time: Approx 30 minutes

Ingredients

  • 2 sweet potatoes (or baking potatoes), each cut into 6-8 wedges
  • 2 tbsp vegetable oil
  • 2 x125g cans Princes Texas BBQ Mackerel Fillets
  • 100g Savoy or green cabbage, finely shredded
  • 1 small carrot, grated
  • 2 tbsp finely chopped onion
  • 1 tbsp chopped fresh chives
  • 2 tbsp mayonnaise
  • Salt and freshly ground black pepper
  • Squeeze of lemon juice

Method

  1. Preheat the oven to 200°C, fan oven 180°C, Gas Mark 6.
  2. Toss the sweet potato wedges (or regular potato wedges) in the vegetable oil. Arrange them on a baking tray and roast for 30 minutes until tender, turning once after 20 minutes.
  3. Meanwhile, break the Princes Texas BBQ Mackerel Fillets into large chunks, reserving the sauce.
  4. Make the coleslaw by mixing together the cabbage, carrot, onion, chives and mayonnaise. Season with salt, pepper and a squeeze of lemon juice.
  5. Serve the mackerel chunks with their sauce, accompanied by the potato wedges and coleslaw.

Mexican Mackerel Nachos

Mexican Mackerel Nachos
  • Serves: 2

Ingredients

  • 2 cans Princes Mexican Limited Edition Mackerel Fillets
  • 100g corn tortilla chips
  • 75g cheddar cheese, grated
  • Soured cream
  • Guacamole
  • Tomato salsa
  • Ground paprika pepper

Method

  1. Pre-heat oven to 200°C(180°C fan oven)/Gas Mark 6.
  2. Arrange the tortilla chips in an oven-proof serving dish.
  3. Place the contents of 2 cans of Princes Mexican Limited Edition Mackerel Fillets into a bowl and break up into chunky flakes.
  4. Top the tortilla chips with the flaked mackerel and sauce, sprinkle over the grated cheese and bake in the oven for 8 minutes or until the cheese is melted.
  5. Place a few teaspoons of soured cream over the dish, and sprinkle with paprika if desired.
  6. Serve as a sharing dish for 2, with guacamole and tomato salsa.

Brazilian Mackerel with Wild Rice and Pineapple
  • Serves: 2
  • Preparation: Approx 5 minutes
  • Cooking time: Approx 5 minutes

Ingredients

  • 120g fresh prepared pineapple, cut into pieces
  • 2 x 250g packs microwavable long grain & wild rice
  • 2 tbsp finely chopped red onion
  • 1 tbsp chopped fresh chives
  • 2 x125g cans Princes Brazilian Mackerel Fillets
  • Salt and freshly ground black pepper
  • Squeeze of lemon juice

Method

  1. Heat a chargrill pan or grill. Chargrill or grill the pineapple pieces for 1-2 minutes on each side.
  2. Meanwhile, prepare the microwavable rice according to pack instructions, then add the red onion and chives and stir them through. Share between 2 serving plates.
  3. Break the Brazilian Mackerel Fillets into chunks and serve on top of the rice, with the sauce spooned over. Serve with the pineapple.

Mackerel Piri Piri Couscous Salad
  • Serves: 2
  • Preparation: Approx 15 minutes

Ingredients

  • 190g can Princes Piri Piri Mackerel Fillets
  • 150g couscous
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 small red onion, finely chopped
  • 1 yellow or red pepper, deseeded and chopped
  • 8 radishes, chopped
  • 2 tomatoes, chopped
  • ¼ cucumber, chopped
  • Salt and freshly ground black pepper

Method

  1. Put the Princes Piri Piri Mackerel Fillets onto a plate and share into 4 equal portions.
  2. Put the couscous into a heatproof bowl and pour over enough boiling water to cover it by 2cm. Stir, then leave to soak and swell for 10 minutes.
  3. Meanwhile, mix together the lemon juice and olive oil in a large bowl and add the red onion, stirring to coat.
  4. Fluff up the couscous with a fork and add it to the red onion with the pepper, radishes, tomatoes and cucumber. Season with a little salt and pepper and stir well.
  5. Share the couscous between 4 serving plates and serve, topped with the mackerel fillets.

Quick Escabeche-Style Mackerel
  • Serves: 1 as a main meal
  • Preparation time: 5 minutes
  • Cooking time: 10 minutes

Ingredients

  • 1 tablespoon olive oil
  • 1 small (or half a medium sized) red onion, sliced
  • 1 small carrot, cut finely or shaved into ribbons with a peeler
  • 1 garlic clove, crushed or chopped finely
  • Good pinch of dried thyme
  • 2 tablespoons red wine vinegar
  • 1 x 125g can of Princes Mackerel in a Spicy Tomato Sauce
  • Fresh flat leaf parsley or rocket to garnish (optional)

Method

  1. Heat the olive oil in a frying pan over a medium heat.
  2. Add the onion and carrot. Cook for 3-4 minutes until just soft, stirring frequently.
  3. Add the garlic and thyme and cook for another minute, stirring frequently until the garlic is cooked.
  4. Add the red wine vinegar and stir well. Turn the heat up until it bubbles, then immediately turn the heat back down.
  5. Open can of Princes Mackerel in a Spicy Tomato Sauce and add to the pan – the sauce and the fish.
  6. Stir gently so the sauce coats all the ingredients without breaking up the mackerel fillets. Cook for a further 1-2 minutes until the fish is warmed through.
  7. Serve hot or cold on top of a slice of toasted crusty bread or over rice.

Tasty Tomato, Mackerel and Potato Salad
  • Serves: 4

Ingredients

  • 190g can Princes Tomato and Roasted Onion Mackerel Fillets
  • 500g baby new potatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 12 cherry tomatoes, halved
  • 100g roasted red peppers (from a jar) sliced
  • 6 spring onions, finely sliced
  • 2 tbsp capers, drained
  • 1 tbsp chopped fresh parsley
  • Salt and freshly ground black pepper

Method

  1. Put the Princes Tomato and Roasted Onion Mackerel Fillets onto a plate and share into 4 equal portions.
  2. Cook the new potatoes in gently boiling water for 15 minutes, until tender. Drain well. Add the olive oil and lemon juice, and season with a little salt and pepper. Leave to cool.
  3. Add the cherry tomatoes, peppers, spring onions, capers and parsley to the cooled potatoes.
  4. Share the potato salad between 4 serving bowls or plates and serve, topped with the mackerel fillets.

Mackerel Jansson’s Temptation (Swedish Potato Gratin)
  • Serves: 4
  • Preparation time: 10 minutes
  • Cooking time: 35 minutes

Ingredients (serves 4)

  • 4 medium potatoes (peeled & thinly sliced)
  • 1 knob butter
  • 1 medium onion (peeled & thinly sliced)
  • 2 x 190g cans Princes Peppered Wood Smoked Mackerel Fillets in Sunflower Oil (drained and broken into flakes)
  • 1 sprig dill
  • 150ml double cream
  • 50g Jarlsberg or other Scandinavian cheese (thinly sliced or grated)

Method

  1. Heat the oven to 190C (180 C fan) / GM 5
  2. Place the potatoes in a large pan of salted water and bring to a gentle simmer. Cook for two minutes, then drain.
  3. Whilst the potatoes are cooking fry the onions in the butter until softened
  4. Layer the potato, onion, Princes Peppered Wood Smoked Mackerel Fillets in Sunflower Oil and a few dill leaves into oven proof dishes. Carry on until you have used all the ingredients.
  5. Pour over the cream, top with the cheese, season well with pepper.
  6. Bake for 30 - 35 minutes until golden brown.

Princes Tangy Mustard Mackerel Toasts

Mackerel Piri Piri Couscous Salad
  • Serves: 2
  • Preparation: Approx 10 minutes
  • Cooking time: 4 minutes

Ingredients

  • 125g can Princes Mackerel Fillets in Tangy Mustard Sauce
  • 2 slices rustic bread, such as sourdough or ciabatta
  • 2 tomatoes, finely chopped
  • 1 small red pepper, deseeded and finely chopped
  • 2 tsp olive oil
  • Salt and freshly ground black pepper
  • 1 tbsp chopped spring onion or chives
  • Parsley sprigs, to garnish (optional)

Method

  1. Preheat the grill. Break the Princes Mackerel Fillets into chunks, reserving the sauce.
  2. Toast the slices of bread on one side.
  3. Mix together the tomatoes and red pepper. Add the olive oil and season with salt and pepper. Pile onto the untoasted sides of the bread. Return to the grill and cook for 2-3 minutes.
  4. Share the mackerel between the toasts, drizzling the mustard sauce over the top. Add the chopped spring onion or chives and serve, garnished with parsley.

Summer Pasta with Mackerel in Tomato Sauce
  • Serves: 2
  • Preparation: Approx 10 minutes
  • Cooking time: Approx 12 minutes

Ingredients

  • 125g can Princes Mackerel Fillets in Tomato Sauce
  • 100g pasta shapes, such as spirals or bows
  • 80g fine green beans, trimmed and halved
  • 2 tbsp red or white wine vinegar
  • 3 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1 small red onion, thinly sliced
  • 10 baby plum tomatoes, halved
  • Handful of rocket
  • Basil leaves, to garnish

Method

  1. Break the Princes Mackerel Fillets into chunks, reserving the sauce.
  2. Cook the pasta shapes in boiling, lightly salted water for 10-12 minutes, adding the green beans to the pan after the pasta has cooked for 5 minutes. Drain and rinse with cold water to cool quickly.
  3. While the pasta is cooking, mix together the vinegar and olive oil in a salad bowl with a pinch of salt and pepper. Add the red onion, stirring to mix. Leave to stand for 5-10 minutes.
  4. Add the tomatoes, cooled pasta and green beans to the salad bowl, tossing to mix, then gently stir in the rocket. Serve with the chunks of mackerel and tomato sauce, garnished with a few basil leaves.

Mackerel, Avocado and Tomato Salad with Crispy Bacon

Ingredients

  • 125g can Princes Mackerel Fillets in Olive Oil
  • 4 rashers streaky bacon, snipped into pieces
  • 2 tbsp lemon juice or cider vinegar
  • Salt and freshly ground black pepper
  • 1 small bag mixed salad leaves
  • 4 spring onions, thinly sliced
  • 3 tomatoes, sliced into wedges
  • 1 large ripe avocado, pitted, peeled and sliced

Method

  1. Drain the olive oil from the can of Princes Mackerel Fillets into a salad bowl. Break the fish into chunks and set aside.
  2. Dry fry the bacon bits in a non-stick frying pan until crisp.
  3. While the bacon is cooking, mix the lemon juice or cider vinegar into the olive oil, adding a pinch of salt and pepper.
  4. Add the salad leaves, spring onions, tomatoes and avocado to the salad bowl, tossing gently to coat with the dressing. Serve, topped with the chunks of mackerel and hot crispy bacon bits.

Curried Mackerel Fishcakes
  • Serves: 4(based on 2 fish cakes per person)
  • Preparation time: 45 minutes
  • Cooking time: 15 minutes

Ingredients

  • 800g (approx 8 medium potatoes) of mashed potato
  • 2 x 190g cans of Princes Mackerel Fillets in Sunflower Oil
  • Juice of 1 lime
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp ground coriander
  • 1 tbsp tomato puree
  • 1 tbsp mango chutney
  • 2 small naan breads (approx 200g)
  • 75g desiccated coconut
  • Zest of 1 lime
  • 2 eggs
  • Large knob of butter

Method

  1. Drain oil off Princes Mackerel Fillets in Sunflower Oil and reserve to use later (for frying).
  2. In a bowl, break up the fish with a fork and add to the mashed potato. Mix well.
  3. Add the spices, tomato puree, lime juice and mango chutney and mix together.
  4. Shape mixture into eight fishcakes and cover and chill in the fridge for at least 30 minutes.
  5. Blitz the naan breads in a food processor to make breadcrumbs. Add the desiccated coconut and lime zest and mix.
  6. Remove fishcakes from fridge and beat two eggs into a bowl.
  7. Dip each fishcake into the beaten egg mixture and roll in breadcrumbs.
  8. Heat 1 tsp. of reserved sunflower oil in a non-stick pan over a medium heat. Add a little of the butter and fry each fishcake until brown.
  9. Serve alongside salad, naan bread and a dollop of mango chutney.

Princes Mackerel Fillets in Hot Chilli Dressing
  • Preparation: Approx 10 minutes
  • Cooking time: Approx 6 minutes

Ingredients

  • 2 x 125g cans Princes Mackerel Fillets in Hot Chilli Dressing
  • 1 tablespoon vegetable oil
  • 200g cooked new potatoes, cut into chunks
  • 6 spring onions, sliced
  • 100g red or yellow pepper, deseeded and sliced
  • 100g sugar snap peas or mangetout, halved
  • 1 small courgette, sliced
  • Salt and freshly ground black pepper

Method

  1. Tip the cans of Princes Mackerel Fillets in Hot Chilli Dressing into a bowl and break the fish into large chunks.
  2. Heat the vegetable oil in a wok or large frying pan and stir-fry the potatoes for 2 minutes until beginning to brown.
  3. Add the spring onions, pepper, sugar snap peas or mangetout and courgette and stir-fry for 3-4 minutes. Season with a little salt and pepper.
  4. Just before serving, gently stir through the mackerel and dressing, taking care to avoid breaking up the chunks of fish. Serve immediately.
