Mackerel Sizzle Zesty Lime and Chilli
1x 160g can Princes Mackerel Sizzle Zesty Lime and Chilli
3 cherry tomatoes, chopped
Small piece of cucumber, finely chopped
1tbsp finely chopped red onion
1tsp finely chopped green chilli
1 wholemeal or white pitta
2-3 lettuce leaves
Salt and freshly ground black pepper
1. Sizzle the mackerel and marinade over a medium heat for 1½ minutes each side, spooning the marinade over the fish.
2. While the fish is cooking, mix together the tomatoes, cucumber, red onion and chilli. Season with a little salt and pepper.
3. Warm the pitta in a toaster or under the grill. Split and fill with the lettuce leaves, salad and mackerel, spooning a little marinade on top
