- 2 x 160g can Princes Mackerel Sizzle Spicy Fajita & Lime
- 4 tomatoes, finely diced
- 1 red onion, finely diced
- Handful of chopped coriander
- 1 lime
- 8 small soft tortillas
- 4 tsp creme fraiche
- Salt & pepper
- Olive oil

Method
- Make the salsa by mixing the diced tomatoes with the diced red onion, chopped coriander and the juice of one lime. Season with salt and pepper then keep to one side.
- Heat the contents of the mackerel fajita tins in a pan for 3 minutes, turning half way through
- Assemble the fajitas by spooning on some mackerel in sauce and some salsa, then garnishing with a drizzle of creme fraiche.
