2 x 125g cans Princes Mackerel in a Spicy Tomato Sauce
1 yellow pepper

4 slices wholemeal bread from a 400g loaf
Fresh basil, to garnish
These clever ‘tarts’ use bread instead of pastry and you can always substitute the peppers for whatever vegetables you have in the fridge so dinner is never far away.

- Preheat the oven to 200°C/400°F/Gas 6. Quarter the pepper and onion and halve the tomato.
- Arrange in a shallow roasting tin, season well and sprinkle with the dried mixed herbs. Spray with oil and bake for 25-30 minutes until tender.
- Meanwhile, remove the crusts from the bread and gently roll each slice with a rolling pin. Spray one side of each slice with oil and press, sprayed side down, into the base of 4 x 10cm/4in non-stick Yorkshire pudding tins. Beat the egg and brush over the top of each slice. Bake for 12-15 minutes until crisp and golden. Allow to cool for 10 minutes in the tins.
- Chop the roasted vegetables roughly and mix together. Flake the Princes Mackerel in a Rich Spicy Tomato Sauce into the mixture and pile into the bread cases. Return to the oven for 5 minutes. Serve immediately with salad and garnished with basil leaves.
