Infused Tuna in Olive Oil
2 x 120g cans Princes Tuna Infused with Olive Oil
100g canned green lentils, rinsed
400g can 5 bean salad, rinsed and drained
100g cooked couscous
1 yellow pepper, deseeded and chopped
4 spring onions, finely chopped
2tbsp chopped fresh parsley
2-3tsp lemon juice
Salt and freshly ground black pepper
Parsley sprigs and lemon wedges, to garnish
Princes Infused Tuna in Olive Oil is available in most Asda stores
1 Drain the cans of tuna, reserving the olive oil.
2 Mix together the lentils, 5 bean salad and couscous with the pepper, spring onions and parsley. Season with salt and pepper.
3 Share between 2 plates and top with the tuna. Drizzle the reserved olive oil and lemon juice on top. Serve, garnished with parsley sprigs and lemon wedges
