  1. Tip the cans of Princes Mackerel Fillets in a hot Piri Piri style sauce onto a plate. Cover and set aside.
  2. Cook the potatoes in lightly salted boiling water until tender, about 15-20 minutes.
  3. While the potatoes are cooking, make the dressing by mixing together the lemon juice and olive oil. Season with salt and pepper.
  4. Drain the potatoes well and add the dressing. Leave them to cool.
  5. Share the spinach, radish, tomatoes and potatoes between 2 serving plates. Top with the mackerel fillets and their sauce, then serve.
