Watch how its done
- Heat the rice in a bowl in the microwave – make sure it’s nice and hot.
- While the rice is heating up, put the washed spinach into a pan that has a lid, and pop on the lid. Warm it over a gentle heat for a minute until the spinach is just starting to wilt, then turn it off and take off the lid.
- Add the mackerel fillets to a hot pan then pour over the sauce. Sizzle for one and a half minutes on each side.
- Pile the rice onto a nice warm plate and top with the mackerel and pour over the sauce. Serve with the spinach, and a juicy wedge of lime to squeeze over.
