Tuna Filler in Sweet Potato

Princes New York Deli Filler is a delicious mix of tuna with sweetcorn in a cool mustard mayo and perfect on a sweet jacket potato.

Ingredients

2 large sweet potatoes, scrubbed

2 x 100g cans Princes Tuna Fillers – New York Deli

Mixed salad leaves, to garnish

Method

1. Prick the sweet potatoes and microwave on full power for 5-6 minutes, then turn them over and microwave on full power for a further 5-6 minutes. Check that the sweet potatoes are tender – if not, microwave for a further 1-2 minutes, or until done.

 

2. Split the sweet potatoes and place on serving plates. Spoon one can of New York Deli Tuna Fillers into each sweet potato.

 

3. Serve, garnished with the salad leaves.

 

Cook’s tip:

If just cooking one sweet potato at once, microwaving time will decrease by 4-5 minutes.

To oven bake the sweet potatoes, preheat the oven to 200°C, fan oven 180°C, Gas Mark 6. Prick the sweet potatoes, then bake for approximately 50 minutes, or until tender.
