We have all been loving the viral crispy smashed potatoes! So why not add a little crunch to your Princes tuna salad?
Crispy Smashed Potato Tuna Nicoise Salad

Ingredients:
For the salad
8 new potatoes
1 tsp Crisp ‘n Dry oil
1 romaine lettuce, torn into shreds
2 eggs, boiled
100g trimmed green beans, cooked
2 salad tomatoes, sliced into wedges
2 tins Princes Tuna Chunks in Spring Water, drained
Handful black pitted olives
For the dressing
2 tbsp olive oil
2 tbsp lemon juice
1 tsp red wine vinegar
½ shallot, finely chopped
1 garlic clove, finely chopped
2 anchovy fillets, finely chopped
1 tsp dijon mustard
Sea salt flakes to taste
Black pepper to taste
Cooking Instructions:
- In a saucepan of salted boiling water add the new potatoes and boil for 12–13 mins until they are soft by checking with a sharp knife then drain.
- Wait for the potatoes to cool for 5 mins and then crush them gently with a wooden spoon or spatula then brush them with Crisp ‘n Dry oil and cook them in an air fryer for 10 mins at 200°C until golden and crispy!
- Next make the salad dressing by combining the olive oil, lemon juice, red wine vinegar, shallots, garlic, anchovies, mustard and then season with salt and pepper to your liking and mix together until all combined.
- In two bowls add the shredded romaine lettuce, cooked green beans, tomatoes and boiled eggs then top with the Princes Tuna Chunk in Spring water then drizzle with the nicoise dressing and enjoy!
