If the jacket potato hooked up with a roast potato, this would be the love child! A giant jacket potato cooked perfectly in goose fat a air fried until crispy. Then served just like a traditional jacket potato with you favourite Princes Tuna filling!
Tuna Mayo stuffed Giant Roast Potato
- Servings: 1
- Cooking Time: 40 mins
Ingredients:
- 1 large baking potato, peeled
- 1 tbsp goose fat, melted
- 1 sprig of fresh thyme
- 1 clove of garlic, peeled
- 1 tin of Princes Tuna Chunks, drained
- 2 tbsp Hellmann’s Mayonnaise
- 1 tsp Dijon mustard
- ½ lemon, juiced
- 100g tinned sweetcorn
- ½ small red onion, finely sliced
- 1 tsp fresh chives, finely chopped, plus more for serving
- Knob of butter
- Crispy fried onions for serving
- Salt and pepper to taste
Cooking Instructions:
- In a saucepan of salted boiling water add a clove of garlic and a sprig of thyme then add in the potato and boil for 10 mins
- Drain and fluff the potato by shaking it in the pan.
- Melt the goose fat in a small dish in the microwave for 1 min then brush over the potato liberally and season with salt and pepper to your liking.
- Place in an air fryer and cook at 200ºC for 30–40 mins until golden brown and crispy.
- While the potato cooks, create the filling by adding the Princes tuna to a bowl followed by the mayonnaise, dijon mustard, sweetcorn, red onion, chives and salt and pepper then mix all of the ingredients together well.
- Slice the potato in half then add a small knob of butter followed by the filling then top with some crispy fried onion bits and some more fresh chives and enjoy!
