Small handful baby spinach leaves, washed

1 free range egg

Few fresh chives, chopped

Method

  1. Toast the bread on both sides under the grill then leave the grill on
  2. Meanwhile heat a pan of water and poach an egg
  3. Top the toast with the spinach leaves then the mackerel in sauce, breaking up the pieces of fish into bite-sized chunks
  4. Return the toast to the grill for a minute, just to warm through a little
  5. Pop the poached egg on top of the mackerel on toast and sprinkle over the chopped chives
