Made with Princes Tuna Chunks, these Thai Tuna burgers with mango salsa take less than 8 minutes to cook and are a good source of protein.
Thai Tuna Burgers with Mango Salsa

Ingredients:
1 x 145g can Princes tuna in spring water or brine, drained
25g breadcrumbs
½ medium or 1 small red pepper, diced
4 spring onions, finely chopped
2 tbsp mayonnaise
2 tsp sriracha or sweet chilli sauce, or more to taste if you like your food hot
1 small bunch fresh coriander, chopped
1 small egg, beaten
1 tbs plain flour, for shaping
1 small ripe mango, diced
Juice and zest of 1 lime
½ red chilli, deseeded and finely chopped
1 tbsp rapeseed oil
2 burger buns
4 Little gem lettuce leaves
Cooking Instructions:
- Place the tuna in a bowl, add the breadcrumbs, diced pepper, spring onions, 1 tbsp mayonnaise, and 1 tsp sriracha or sweet chilli and half the coriander and mix well until ingredients are combined. Add the egg, a little at a time, until the mixture is sticky enough to be shaped into burgers
- On a floured surface shape the tuna mixture into 2 burgers, place on a plate and transfer to the fridge for at least 1 hour to chill.
- To prepare the salsa mix the mango, lime juice and remaining coriander.
- Heat the oil in a frying pan and cook the burgers for 4-5min either side or until golden brown.
- Slice the burger bun in half and lightly toast.
- Mix the remaining mayo and sriracha and spread over the burger buns. Add the lettuce, add  burgers, top with a spoonful of the salsa and serve.
