Ingredients

3 x 145g cans Princes tuna chunks in spring water, drained  

2 x 400g cans chickpeas in water, rinsed and drained

1 large red pepper, de-seed and diced

2 ripe avocadoes, stone removed and flesh diced

1 small red onion, peeled and thinly sliced or a bunch of spring onions, finely sliced

30g fresh coriander, roughly chopped

Dressing 

5 tbsp sweet chilli sauce

2 tbsp olive oil

Juice of 1 large lemon

Method

  1. Mix together all of the ingredient for the salad in large serving bowl.
  2. To make the dressing whisk together the sweet chilli sauce, olive oil and lemon juice and stir through the salad.
