A quesadilla is the ultimate comfort food that some might call a Mexican toasted sandwich. Get Cooking and enjoy this Princes Tuna Quesadilla recipe!
Smokey Tuna Quesadillas

Ingredients:
- 2 corn tortilla wraps
- 1 tin Princes tuna chunks, drained
- 100g tinned sweetcorn
- ½ small red onion, sliced
- 5g fresh coriander, roughly chopped
- 1 tbsp sour cream, plus more for serving
- 1 tsp smoked paprika ½ tsp chipotle chilli flakes
- ½ tsp cumin
- ½ lime, juiced
- Couple of handfuls of grated cheddar cheese
- Salsa for serving Guacamole for serving
Cooking Instructions:
- In a bowl combine the Princes tuna chunks with the sweetcorn, red onion, coriander, mayonnaise, smoked paprika, chipotle chilli flakes, cumin and lime juice and mix together well.
- Add half of the mixture to one side of each tortilla wrap then sprinkle over a handful of grated cheese to each then fold the other side of the wrap over carefully.
- In a large frying pan or cast iron skillet heat until it reaches a medium to high heat then add one of the quesadillas and cook for 3 mins on each side pressing down firmly to ensure the cheese melts then repeat for the second quesadilla.
- Cut in half and serve with salsa, guacamole and sour cream and enjoy!
