Tuna and Spinach Crepes

These tuna & spinach crepes add a new savoury variant to the traditional recipe

Ingredients:

120g can Princes Tuna Chunks in spring water, drained

2x tbsp of rapeseed oil

2x garlic cloves, chopped

250g baby spinach

1x tbsp tomato purée

200g cottage cheese

2 large eggs

4x tbsp plain wholemeal flour

Cooking Instructions:

  1. First heat some oil in a large non-stick pan and fry the garlic briefly.
  2. Stir in the spinach and allow it to wilt. Then mix in the Princes Tuna, tomato puree and cottage cheese. – Once mixed set aside.
  3. In a separate bowl, beat together the eggs, flour and water to make a pancake mix.
  4. In a pan, pour half of the batter and spread evenly. Once set flip it over (in the air if you are brave enough!) and cook the remaining side.
  5. Then for you vibrant salad you will mix together sweetcorn, cherry tomatoes, chopped red onion, pitted olives, basil leaves and some balsamic vinegar.
  6. Finally to serve, spoon the tuna filling on one side of the pancake and fold in half.
  7. Serve with your salad and enjoy!!
