These tuna & spinach crepes add a new savoury variant to the traditional recipe
Ingredients:
120g can Princes Tuna Chunks in spring water, drained
2x tbsp of rapeseed oil
2x garlic cloves, chopped
250g baby spinach
1x tbsp tomato purée
200g cottage cheese
2 large eggs
4x tbsp plain wholemeal flour
Cooking Instructions:
- First heat some oil in a large non-stick pan and fry the garlic briefly.
- Stir in the spinach and allow it to wilt. Then mix in the Princes Tuna, tomato puree and cottage cheese. – Once mixed set aside.
- In a separate bowl, beat together the eggs, flour and water to make a pancake mix.
- In a pan, pour half of the batter and spread evenly. Once set flip it over (in the air if you are brave enough!) and cook the remaining side.
- Then for you vibrant salad you will mix together sweetcorn, cherry tomatoes, chopped red onion, pitted olives, basil leaves and some balsamic vinegar.
- Finally to serve, spoon the tuna filling on one side of the pancake and fold in half.
- Serve with your salad and enjoy!!
