Tuna, Broccoli & Pea Penne Pasta Bake

Ingredients:
- 300g pasta of your choice, part-cooked
- 1 head of broccoli, cut into small florets
- 250g frozen peas
- 1 tbsp olive oil
- 30g butter
- 2 cloves garlic, finely chopped
- 1 medium onion, finely chopped
- 2 cans Princes Tuna Chunks in Spring Water
- 200g Mascarpone
- 500ml milk
- 2 tsp cornflour, mixed with a splash of water
- 225g cheddar cheese, grated (plus extra for topping)
- 2 tbsp Parmesan cheese, grated
- Salt and pepper to taste
- 1 tbsp breadcrumbs
Cooking Instructions:
- In a large saucepan, melt the butter and sauté the garlic and onion until soft.
- Add the mascarpone, milk, cheddar, and Parmesan cheese. Season with salt and pepper, and cook until the cheese has melted and the mixture is smooth.
- Stir in the cornflour mixture and bring to a boil, then reduce to a simmer until the sauce thickens. Remove from heat.
- Part-cook the pasta, then drain and transfer to an ovenproof dish.
- Add the broccoli, peas, and Princes Tuna chunks. Pour over the cheese sauce and mix well. Top with extra cheddar cheese and breadcrumbs.
- Bake in a preheated oven at 200°C for 35 minutes until golden brown and bubbly. Serve immediately and enjoy!
