Fruity-topped Bagels

Fresh bagels have a deliciously chewy texture, making them the perfect base for these refreshing fruit toppings.

Cooks Tips:

You can keep bagels in the freezer for up to 3 months – then you can just defrost the number you need.

Try using a selection of different bagels, such as sesame seed, cinnamon and raisin, wholemeal or plain.

Keep it simple and just make one variety of the fruity bagels.

Ingredients:

1 x 227g can Princes Pineapple Chunks with Juice

1 x 298g can Princes Mandarin Segments with Juice

1 x 220g can Princes Peach Chunks with Juice

3 bagels, split horizontally

200g low fat soft cheese

20 strawberries, sliced

20g blueberries

20g raspberries

Cooking Instructions:

  1. Drain the cans of pineapple, mandarins and peaches thoroughly.
  2. Lightly toast the cut sides of the bagels. Spread the low fat soft cheese on top.
  3. Top 2 bagel halves with the pineapple and strawberries, 2 bagel halves with the mandarin segments and blueberries and 2 bagel halves with the peach chunks and raspberries. Serve any excess fruit separately.
  4. Serve immediately.
