Tortilla Chips with Jack Mackerel In Spicy Tomato Sauce

Ingredients:

125g can Princes Jack Mackerel in Spicy Tomato Sauce
40g tortilla chips
2 tbsp half fat crème fraiche
Paprika, for sprinkling
4 tbsp reduced fat guacamole
Lime wedges, to serve
Chopped fresh coriander, to garnish

Cooking Instructions:

  1. Put the Princes Mackerel Fillets, with all the sauce, onto a plate and break up into chunks.
  2. Share the tortilla chips between 2 serving plates and top them with the crème fraiche. Sprinkle with a little paprika, then add the guacamole.
  3. Top with chunks of mackerel and spoon on the sauce. Serve with lime wedges, squeezing the juice over the fish. Garnish with chopped fresh coriander.
