1 x 340g can Princes Corned Beef
8 slices wholemeal seeded bread
Butter, for spreading
Lettuce leaves
1 carrot, grated
1 cooked beetroot, grated
2 spring onions, finely sliced
100g white or red cabbage, finely shredded
Few drops of vinegar
Salt and freshly ground black pepper

Princes Corned Beef is available in all major supermarkets and selected independents


  1. Chilled from the fridge, remove the Princes Corned Beef and slice it thinly.
  2. Spread each slice of bread with butter and top 4 of the slices with lettuce leaves.
  3. Make the coleslaw by mixing together the carrot, beetroot, spring onions and cabbage. Season with a little vinegar, salt and pepper. Pile onto the lettuce leaves.
  4. Arrange the sliced corned beef on top, sandwich together with the remaining bread and slice each sandwich in half. Serve at once, or wrap and chill for a picnic or packed lunch.
