  1. Pan fry the sliced onion and diced carrots in a splash of olive oil for about 5 minutes
  2. Add the corned beef chunks, chopped tomatoes, stock cube and a splash of water, then simmer for 5 minutes, season to taste
  3. If you don’t have an ovenproof pan transfer to an ovenproof dish
  4. Top with slices of potato, drizzle with olive oil and sprinkle with salt and pepper
  5. Bake in the oven for about 30 minutes at 180c until the potatoes are golden brown
