Tomato Stuffed With Mediterranean Salmon

Try a Princes Favourite of stuffed tomato with Mediterranean Salmon – simple to make and ready quickly.

Ingredients:

Tomato crowns with the middle scooped out x 2

Princes canned salmon x 1 can (213g)

Mayonnaise x 75g

Sun-dried tomato paste x 40g

Black pepper to taste

Chopped fresh basil x 5g

Chopped black olives x 15g (optional)

Garlic puree x 1g

Smoked paprika x 1.5g

Salt to taste if required

Cooking Instructions:

  1. Start the tomato crown by cutting zig zag slices all around it
  2. Once you have made your way around the whole tomato it should split into two ‘crowns’
  3. Scoop the seeds of the tomato out so that the crowns are ready for filling
  4. Drain any liquid from the salmon, place in a bowl and mash up with a fork
  5. Add in the rest of the ingredients and mix
  6. Fill the crowns with salmon mix
  7. Chill in the fridge for a couple of hours to firm up the salmon mousse and serve as a delicious main course
