Salmon and Spinach Filo Pastry Bites

These cream cheese, Princes Salmon and spinach filo pastry bites are so simple to make and perfect if you are entertaining!

Ingredients:

  • 1 tin Princes Skinless and Boneless Red Salmon, drained
  • 150g pre-rolled filo pastry, cut into 5cm squares
  • 150g young spinach, blanched, drained, squeezed and chopped
  • 175g cream cheese
  • 10g dill, finely chopped, plus more for garnish
  • 1 lemon, squeezed
  • 1 tsp black pepper
  • 1 mini cup muffin tray (24 capacity)

Cooking Instructions:

  1. In a bowl, add the cream cheese, Princes Red Salmon, dill, pepper, lemon juice and spinach and mix together well until all combined then set aside.
  2. Next take 4 slices of filo pastry that have been cut into 5cm squares and place them on top of each other in a diamond formation then push them down into the mini muffin tray, poking them down with your finger then fill each with a teaspoon of the salmon mixture.
  3. Then pop in the oven for 15 mins at 190°C until the pastry is golden brown and crispy then plate up and enjoy!
