Tomato crowns with the middle scooped out x 2

Princes canned salmon x 1 can (213g)

Mayonnaise x 75g

Sundried tomato paste x 40g

Black pepper to taste

Chopped fresh basil x 5g

Chopped black olives x 15g (optional)

Garlic puree x 1g

Smoked paprika x 1.5g

Salt to taste if required

Princes Wild Pacific Red Salmon is available in selected Sainsbury's and Tesco stores

Method

  • Start the tomato crown by cutting zig zag slices all around it
  • Once you have made your way around the whole tomato it should split into two ‘crowns’
  • Scoop the seeds of the tomato out so that the crowns are ready for filling
  • Drain any liquid from the salmon, place in a bowl and mash up with a fork
  • Add in the rest of the ingredients and mix
  • Fill the crowns with salmon mix
  • Chill in the fridge for a couple of hours to firm up the salmon mousse and serve
